Wight Whisky, the first independent whisky distillery on the Isle of Wight, has announced the details surrounding their inaugural product.

The whisky, coined the Signature Malt Blend, promises to have the distillery’s single malt whisky at the heart of the product, bringing a great degree of complexity and character to every bottle. The combination of light oak and dried fruit flavour results in “a smooth and creamy honeyed finish”.

The bottle looks to be perfect for those looking for a taste of the Island. Wight Whisky’s single malt whisky only uses barley from Isle of Wight farms, working closely with Isle of Wight Grain, a non-profit organisation that represents and supports Island-based farmers. A stamp of the organisations can be found on the back of all of the distillery’s bottles.

In addition to this, the whisky mash is produced and brewed at the Island-based Goddards Brewery in Arreton. The mash is then fermented at the brewery for over 7 days, before being moved across to New Farm in Brading, Wight Whisky’s rural HQ, to undergo the distilling process.

The water for the blend is supplied by Wight Crystal, who source their water directly from Knighton Spring in the heart of the Island. This comes with the added benefit of supporting the Way Forward Programme, a charity endorsed by Wight Crystal that provides training and employment opportunities for people with disabilities on the Island.

Wight Whisky has also put a clear emphasis on the importance of environmental sustainability with their first release, with the bottle being made with recyclable glass, recyclable and biodegradable paper labels, and a tamper-proof seal made from corn and potato starch.

With the release of this Signature Malt Blend, Wight Whisky hopes to secure the funds to distil and lay down additional casks of their signature Isle of Wight Single Malt, as well as firmly establish their brand in the world of whisky. Their Single Malt scotch is set to be aged in oak barrels for the next 3 years, before becoming available for purchase at in 2027.

Wight Mule

Ingredients

  • Wight Whisky Signature Malt Blend
  • Ginger Ale
  • Lime
  • Ice

Instructions

  • Fill a glass with ice
  • Add a measure of Wight Whisky's signature malt blend
  • Squeeze in a wedge or 2 of lime
  • Top with ginger ale
  • Garnish with a lime wedge

  • Belvoir Ginger Cordial
  • Fever Tree Cloudy British Apple
  • 1 Apple (to garnish)
  • Mint (to garnish)
  • Ice

Instructions

  • Fill a glass with ice
  • Add a measure of Wight Whisky's signature malt blend
  • Add a splash of Belvoir Ginger Cordial
  • Top with Fever Tree Cloudy British Apple
  • Garnish with a slice of apple and a sprig of mint

Pineapple Sour

Ingredients

  • 50 ml Wight Whisky's Signature Malt Blend
  • 35 ml Pineapple Juice
  • 25 ml Lemon Juice
  • 10 ml Sugar Syrup
  • 1 Egg White
  • Pineapple Leaf to garnish
  • Edible Flowers to garnish
  • Ice

Instructions

  • Fill a cocktail shaker with ice
  • Add a 50ml measure of Wight Whisky's signature malt blend
  • Add 25ml lemon juice, 35ml pineapple juice, 1 egg white and 10ml sugar syrup
  • Shake well
  • Pour into a chilled tumbler
  • Garnish with a pineapple leaf and edible flowers
