October is the season for all things pumpkin. From pumpkin pie to the yummy mummy favourite, pumpkin spiced latte. So, we thought we’d take a look at making a three-course dinner using pumpkin recipes… and some local ingredients too. Pumpkins are readily available at many farm shops across the Isle of Wight, from Briddlesford Farm Shop in Wootton to Harvey Browns near Arreton and The Garlic Farm in Newchurch (also good at keeping vampires away).

Pumpkin Soup Recipe

Starter: Pumpkin Soup

The first of our three pumpkin recipes is a deliciously simple, quick and tasty soup that makes for a perfect light starter at your pumpkin-themed dinner party.

Ingredients

Pumpkin Soup

  • 2 tbsp olive oil
  • 2 onions finely chopped
  • 1 kg pumpkin or squash (try kabocha) peeled, deseeded and chopped into chunks
  • 700 ml vegetable stock or chicken stock
  • 150 ml Briddlesford double cream

Croutons

  • 2 tbsp olive oil
  • 4 slices wholemeal seeded bread crusts removed
  • handful pumpkin seeds

Instructions

For the soup

  • Heat 2 tbsp olive oil in a large saucepan, then gently cook 2 finely chopped onions for 5 mins, until soft but not coloured.
  • Add the pumpkin/squash and carry on cooking for 8-10 mins, stirring occasionally until it starts to soften and turn golden.
  • Pour the vegetable/chicken stock into the pan and season with salt and pepper. Bring to a boil and simmer for 10 mins until the pumpkin/squash is very soft.
  • Pour in the double cream and bring back to the boil, then purée with a hand blender. Pass through a sieve for a smoother finish.

For the croutons

  • Cut the bread into small squares and heat 2 tbsp olive oil in a frying pan, fry the bread until it starts to become crisp. Add a handful of pumpkin seeds to the pan and cook for a few mins more until they are toasted.
Pumpkin Curry Recipe

Main: Pumpkin Curry

For the main course, we’ve chosen a vibrant vegetarian curry that does not disappoint in flavour or colour! This orange masterpiece stands out on its own but pairs wonderfully with some spicy chicken or fish.

Ingredients

  • 1 tbsp sunflower oil
  • 3 tbsp Thai yellow curry paste or vegetarian alternative
  • 2 onions finely chopped
  • 3 large stalks lemongrass bashed with the back of a knife
  • 6 cardamom pods
  • 1 tbsp mustard seed
  • 1 piece pumpkin or a small squash about 1kg
  • 250 ml vegetable stock
  • 400 ml can reduced-fat coconut milk
  • 400 g can chickpea drained and rinsed
  • 2 limes
  • large handful mint leaves
  • naan bread to serve

Instructions

  • Heat the oil in a pan and gently fry the curry paste with the onions, lemongrass, cardamom and mustard seed for 2-3 mins until fragrant.
  • Stir in the pumpkin/squash and coat in the paste.
  • Pour in the stock and coconut milk.
  • Bring everything to a simmer, add the chickpeas and cook for about 10 mins until the pumpkin/squash is tender.
  • Squeeze the juice of one lime into the curry.
  • Just before serving, tear over mint leaves and serve with warm naan bread.
Pumpkin Cake Recipe

Dessert: Halloween Pumpkin Cake

There’s always room for dessert and we’ve chosen a Halloween Pumpkin Cake. Reminiscent of carrot cake but even more delightful! Be sure to save some for your coffee the next day.

Halloween Pumpkin Cake

Ingredients

For the cake

  • 300 g Calbourne Water Mill self-raising flour
  • 300 g light muscovado sugar
  • 3 tsp mixed spice
  • 2 tsp bicarbonate of soda
  • 175 g sultanas
  • ½ tsp salt
  • 4 local eggs beaten
  • 200 g Briddleford butter melted
  • zest 1 orange
  • 1 tbsp orange juice
  • 500 g peeled weight Isle of Wight pumpkin or butternut squash flesh, grated

For drenching and frosting

  • 200 g pack soft cheese
  • 85 g Briddleford butter softened
  • 100 g icing sugar sifted
  • zest 1 orange and juice of half

Instructions

For the cake

  • Preheat oven: 180C/fan 160C/gas 4. Butter and line a 30 x 20cm baking tin.
  • Mix the flour, sugar, spice, bicarbonate of soda, sultanas and salt into a large bowl.
  • Beat the eggs into the melted butter and stir in the orange zest and juice.
  • Combine with the dry ingredients and stir in the pumpkin.
  • Pour the batter into the tin, bake for 30 minutes (until golden and springy).
  • Cool for 5 mins then turn it onto a cooling rack.
  • Prick all over with a fork/skewer and drizzle the rest of the orange juice over the cake while still warm.
  • Leave to completely cool.

For the frosting

  • Beat the cream cheese, butter, icing sugar, orange zest and 1 tsp of the juice together until smooth and creamy, pop in the fridge while the cake cools.
  • Give the frosting a quick beat to loosen, using a palette knife/spatula, spread it over the top of the cake in peaks and swirls.

Notes

The cake will keep, covered, for up to 3 days in the fridge (remove from fridge 30 mins before serving).
