With summer 2.0 in full swing, it’s the perfect time to grab that shaker and fix yourself a refreshing cocktail. We’ve put together a guide of four fab cocktail recipes using local produce and guaranteed to give you a true taste of the Isle of Wight on these late summer evenings…
Pure Colada No.2
From the Isle of Wight Distillery
Set in the picturesque village of Nettlestone you will find the Isle of Wight’s only distillery. The Mermaid Bar is home to the world-renowned Mermaid Gin. Relax with a G&T either inside the renovated pub (now distillery) or on the pretty outside decking overlooking a small vineyard. The newest addition to the Mermaid line is the Spiced Rum. ‘Sip’ into something a little more summery, and transport yourself to a tropical island, with the bars’ very own Pure Colada No.2. Pure Colada No.2 Recipe
Ingredients
- 20 ml Mermaid Spiced Rum
- 140 ml pineapple juice
- 25 ml coconut syrup
- 25 ml coconut milk
- 35 ml lime juice
- 10 ml vanilla extract
- 2 ml cocoa bitters
To garnish:
- Pineapple leaves
Instructions
- To clarify, add all ingredients, except the rum, into a vessel and stir well.
- Place a coffee filter over a second vessel and pour the ingredients into it.
- Repeat until the desired transparency is achieved.
- To build the cocktail combine Mermaid Spiced Rum with 75ml of the clarified mixture and stir well.
- Pour into an iced highball and garnish.

Pink Siren
From The Met, Ventnor
Along Ventnor Esplanade, you will find The Met. A tapas and wine bar which also has a cracking cocktail menu. With views of Ventnor Bay, and benefiting from the town’s microclimate, The Met is a proper suntrap and when sitting on the outside tables you could be at The Med instead. The bar has a few signature cocktails and none are more impressive than the Pink Siren. A cocktail made with Mermaid Pink Gin and a whole mini bottle of prosecco dunked in. Its enchanting song will have you coming back for more.
Pink Siren Recipe
Ingredients
- 25 ml Mermaid Pink Gin
- 25 ml Chambord
- 25 ml Grenadine
- 100 ml cranberry juice
- Mixed berries
To garnish:
- A single strawberry
- Mini bottle of Prosecco
Instructions
- Shake Mermaid Pink Gin, Chambord, Grenadine and cranberry juice with ice.
- Fill a gin bubble with crushed ice, LOTS of fruit and pour over the cocktail.
- Serve with a strawberry garnish and finish with a small bottle of Prosecco dunked in the top.

The Mermaid Mule
From The Woodvale, Gurnard
If you are after a cocktail or two with the best view of the sunset on the Isle of Wight, let us introduce you to The Woodvale, in Gurnard (near Cowes). With plenty of seating outside you can grab a bench in the early evening and watch the sun go down. As it turns a little chillier head indoors and bag yourself a table by the window – which also benefits from the same amazing views. While there, order yourself a Mermaid Mule, created using Mermaid Salt Vodka, the ginger ale really gives it a ‘kick’!
The Mermaid Mule Recipe
Ingredients
- 25 ml Mermaid Salt Vodka
- 200 ml Fever-Tree ginger ale
- Lime wedges
To garnish:
- A single lime wedge
Instructions
- To build the cocktail, take a highball glass filled with ice and add the Mermaid Salt Vodka.
- Squeeze in the lime wedges to taste, before gently pouring in the Fever-Tree ginger ale.
- Mix with a bar spoon and garnish with a single lime wedge before serving.

Barnacle Bay
From Gastronomy, Cowes

The Barnacle Bay is a sweet and tangy cocktail using Barnacle Brothers Rum, the newest boys on the spirit block.
Barnacle Bay Recipe
Ingredients
- 1 brown sugar cube
- 5 lime wedges
- 25 ml Barnacle Brothers rum
- 25 ml Stambecco Maraschino Cherry Amaro
- 12.5 ml cherry syrup
To garnish:
- Two Maraschino cherries
Instructions
- Muddle/mash the brown sugar cube with the lime wedges in bottom of a cocktail shaker before adding the Barnacle Brothers rum, Stambecco and cherry syrup.
- Shake, before pouring into a tumbler glass filled with crushed ice.
- Garnish with two Maraschino cherries.
